The last of the bluebells

dsc_0111Two weeks ago, Paul and I went for a drive in Kent, the Garden of England. Beautiful countryside, busy as all get out, which is what everywhere in the south of England seems to be. Or, rather everyplace Paul and I tend to go, is where everyone wants to be. The intention was for me to get some practice driving in an enjoyable environment, and also to get some country air. I didn’t and we did. As an aside, I am driving more and more here now – but that’s another story, and perhaps we’ll talk about that later.

So inspired by our drive – and because we’re being cheap at the moment – got to find funds fordsc_0114 a caribou hunt someplace! – we decided to go for a walk in the country last weekend. For a walk in the country – I sound like Londoner when I say that. At home, and so many other places, you just walk out the door. Here, you drive for an hour to get to the country, and then you’re still not far from everyone.

So we took a six mile wander around Kent on public footpaths. It was the first time in a while I’ve been surrounded by countryside. It was gorgeous. We were lucky as well. On our drive the weekend before, I noticed the bluebellsdsc_0128 had been out for a while. Happily, I caught some of these beautiful flowers with my camera. I got my macro lens out and had a bit of fun with that. The bluebells don’t have much longer to go before they’ll fade. They’re such pretty seas of blue in the woods here in Kent, they easily make spring my favorite season in the UK.
The countryside in Kent is beautiful, and quite walkable as well. It’s so easy and accessible for us as well. I hope this is the beginning of a wonderful summer. We have plans to get a tent and hopefully do some more exploring of the English and French countryside – rustic style!

Just keep your dog on a leash and don’t let it worry the sheep!

Ugly Duckling Cake

Yum. It turned out well, although I nearly forgot to put the brown sugar on top. Plus, I used soy milk instead of evaporated for the topping. Either way, though, it tasted good and I proved to Paul that he does like coconut! It doesn’t look like much, but tasted lovely!

I haven’t been able to make this cake in the UK because of the fact I haven’t been able to find a yellow cake mix. I refuse to pay the money for the imports, and sometimes I admit I’m too stubborn to try to find alternatives to things – let alone be bothered to do it. So after five years, it was definitely a treat.

Ugly Duckling Cake
Bake 325 F for 45 minutes
1 yellow cake mix
1 can fruit cocktail
2 1/3 cup coconut
2 eggs
1/2 cup brown sugar packed
1/2 cup butter or oleo
1/2 cup white sugar
1/2 cup evap milk or regular milk
Combine cake mix, fruit with juice, 1 cup coconut and the eggs. Blend, then beat 2 minutes at medium speed. Pour into greased 13 x 9 inch pan. Sprinkle with brown sugar. Bake 325F for 45 minutes or until done – springs back in the center.

Bring butter, white sugar and milk to a boil, boil 2 minutes. Remove from heat and stir in remaining coconut. Spoon over hot cake in pan. Serve warm or cold.

Boy, it’s Blustery

This picture makes me laugh. It’s a picture of me on our trip to Normandy. It was cold. It was windy. I’ve seen bunkers before. You have no idea how many pictures of bunkers I have. I don’t put them ALL in the Gallery.

Small favors…

The weary traveler has returned. Yep, that’s right, Paul’s back from his travels to the states. For those of you who didn’t know, Paul was in Houston for work recently. And what did he bring back for me?

Yes, you see that right! A Betty Crocker Yellow Cake mix, plus a few more other goodies.

Good job it’s a Bank Holiday weekend. One Ugly Duckling Cake, coming right up!
